The man responsible for creating and steering this new concept in fine dining, Philippe Baranes, strives constantly for the flawless application of his bywords: ’quality,’ ‘taste’ and ‘well-being’. At Dessance, his vision of a new food takes shape. With the aim of offering discerning clients an innovative and nuanced experience, Philippe Baranes is closely involved and interacts continuously with his chef, Christophe Boucher; discussing products, exploring techniques and seeking a precise balance of flavours to forge this brand new style of concept which simply overturns all the usual culinary rules, together with the innovative service and drinks pairings. This compulsive creator of some extraordinarily diverse restaurants (Braisenville, La Ferme...) knows the meaning of teamwork and is constantly encouraging his staff to excel, outdo themselves and maintain consistency and excellence.

Originally from Brittany, Christophe Boucher, 32, has absolute faith in Philippe Baranes’ concept of innovative savoury and sweet tasting menus.

Christophe began his career as a commis de cuisine and for thirteen years developed his technical skills in Michelin starred-restaurants, including the Grand Véfour *** and Pavillon Ledoyen***. His culinary dialogue with Philippe has strengthened his cookin. His seasonal creations are subtly intuitive and virtually graphic, constructed like still-life tableaux using surprising – but perfectly balanced - combinations of ingredients.

Dynamic and passionate, our kitchen and service team pride themselves on their excellence and love helping you, the client, discover a whole new range of sweet and savoury flavours in this extraordinary oak-panelled Parisian hideaway. Our waiting staff meet with the producers of our exceptional range of wines and spirits throughout the year, and we are constantly working on new soft drinks, using seasonal fruits and vegetables to find the perfect match, layering flavours or complementing the taste of the food.
